We've all been in the situation where we dread that next chicken meal or can simply not eat another stalk of broccoli these recipes gives you a chance everyone once and a while to break the cycle without waking up in the morning and feeling guilty.

Metabolic Mousaka

Metabolic Mousaka

Ingredients

500g Kangaroo Mince/Chicken Breast Mince
2 Zucchinis sliced
2 Capsicum's thickly sliced
2 Medium sweet potatoes sliced
1 Onion chopped
Fresh oregano
Pepper
Teaspoon Minced Garlic


Method

Spray non-stick Pan with spray cook
Saute garlic and onions and add mince.
Add 1/4 Cup water and reduce.
Meanwhile Char-grill zucchini and Capsicum.
Layer sweet potato, mince, capsicum and zucchini and repeat.
Cover with foil and bake untill potato is cooked.

* You can add tomato paste or tomato sauce.

Serves 4
